I don’t know about you, but I absolutely love banana bread. I like to think of it as a dessert that I don’t feel bad about eating since it has bananas in it! Please, don’t make fun of me, I know it’s not healthy! But it’s just so good, and it’s perfect to make well everyone’s stuck at home with their dying bananas.
I may be biased, but I sternly believe that my mother makes the best banana bread. However, she recently tried making Chrissy Teigen’s famous banana bread, and it’s just as fantastic. You may have already made Chrissy’s recipe for, but if you haven’t, then I’m sharing it with you now! Today, I’m sharing Chrissy Teigen’s famous banana bread recipe with you, but with a slight twist, it includes a cream cheese filling.
Ingredients
- 2 cups mashed very ripe bananas (about 5 bananas)
- 4 eggs
- 2⁄3 cups canola oil, plus a little more to grease the pan
- 2 cups all-purpose flour, plus a little more for dusting the pan
- 2 cups of sugar
- 3.5 oz (or 1 box) vanilla instant pudding mix
- 1 teaspoon baking soda
- 1½ teaspoons kosher salt
- 3.5 oz bar dark chocolate, chopped into chunks
- Salted butter, for serving
For the cream cheese filling
- 8 ounces cream cheese, at room temperature
- 1 large egg
- 1/4 cup sugar
- 2 tablespoons flour
Wet Ingredients
Once you have all your ingredients in front of you, you are now going to focus on the wet ingredients.
- Mash the bananas
- Take out a large bowl, and combine the mashed bananas, the canola oil, and the eggs, and mix them up!
Dry Ingredients
Now that your wet ingredients are mixed, take out another large mixing bowl and your dry ingredients to combine.
- Take out the flour, sugar, baking soda, salt, instant pudding mix, and mix them together.
- After they’re mixed, place the dry ingredient mix into the wet ingredient bowl and begin to fold them together.
- After they’re mixed together, add in the chocolate chips/chunks.
Cream Cheese Filling
If you don’t want to add cream cheese filling, just skip this section and add the batter to a greased bundt pan!
- This part is super easy, all you do is beat together all of the ingredients for the cream cheese filling listed at the top until it’s the consistency of frosting.
- Pour half of the batter into a greased bundt pan, and add about half of the cream cheese filling on top.
- Pour in the rest of the batter and add the rest of the cream cheese filling, this time, insert a butter knife so that it goes through half of the batter to swirl the batter around the bundt pan.
Almost Done!
Place the pan into the oven at 325°F for about 1 hour. To check if it is fully baked, insert a toothpick into the batter and make sure no excess batter comes out.
Finito!
Once your bread is done baking in the oven, pull it out and give it about 10 minutes to cool before removing it from the pan. Once removed, it’s ready to be cut and served!
